Barbados: Day 2

Day two was filled with rest and relaxation ... and sun, which I believe will be a theme of the week. We spent the mid-day on the beach and took a break from the UV rays to watch some NCAA basketball. Tomorrow ... our friend will lead us all on an "Island Tour".

Our friends thoughtfully stocked our kitchen with a couple of essentials before our arrival. Bajan Cherry Juice is delicious, though apparently not actually made of cherries (deceptively, there are cherry pictures on the box). I guess Bajan cherries are small red berries that grow on bushes here.


Brandon's lunch ... one of the staples here is Macaroni Pie - very similar to Mac & Cheese (so of course delicious).




By this evening, our entire party of ten had arrived. We headed back to Oistins so that the last two could experience Clarkston and his culinary magic. This is my kingfish with all of the available sides: macaroni pie, sweet potatoes, plantains, rice & beans, coleslaw, tomatoes and salad.
